Saf-Levure® Blue

Saf-Levure® Blue is a baker’s active yeast, dried at a low temperature in order to keep its fermenting power and to enable a long storage time.

Saf-Levure® Blue is a dehydrated active dry yeast (92-93% dry matter). It comes in the form of granules or pellets, which give it extreme stability at room temperature and good shelf life. Saf-Levure is suitable for all bread-making processes.

Saf-Levure® Blue is an active dry baker’s yeast. Its fermentation power is identical to that of fresh yeast, for 3 to 4 times less weigh.

It can be used easily after rehydratation in water. In addition to its high fermentation power, it features all the advantages of dehydrated product : long shelf life, easy storage, stability and reliability.

It is compulsory to add water to Saf-Levure® Blue dry yeast in 5 times its weight of water at 35/38°C which has been sweetened with sugar. After a waiting period of 15 minutes, add this mixture to the dough mix and follow your normal baking procedures. 

Saf-Levure® Blue can be used in all raised doughs before introduction into the oven, such as pizzas, pastries.
