It is so simple for the baker to create new sourdough breads with devitalized sourdoughs. Nothing else is needed then just adding devitalized sourdoughs to the mixer containing an existing recipe dough to produce several sourdough breads with different sourdough tastes. On the basis of one existing recipe, the baker can realize 10 types of sourdough bread or more. With devitalized sourdoughs the baker can create easlily and quickly sourdough breads and easily diversify his range of bakery goods. The baker can use them alone or play with a palette of notes with no limit for his creativity.Durum wheat medium devitalized dry sourdough brings typical notes of durum wheat fermentation such as ripe wheat, malty notes with a medium intensity of acidity.
LIVENDO® Seigl’issime™ / Rype™ can be used in all kinds of bread making process and is particularly suitable in traditional crusty breads and rye breads.
Adjust the level of use from 4% to 15% on flour weight according to the aroma intensity required from 40g to 150g for 10kg of flour. Add directly to the mixer.
