LIVENDO® Crème de Levain® Spelt is a very interesting live sourdough, as it adds a subtle taste to all types of recipes without betraying their flavor, but rather enhancing them. Versatile, it can be adapted to both savoury and sweet doughs.

Live sourdoughs combine all the advantages of the sourdough made by the baker without the drawbacks. Live sourdoughs are ready-to-use in the mixer. Combined with the baker’s expertise, live sourdoughs activity allows the baker to create signature breads. Live sourdoughs are produced from the natural fermentation of cereal or pseudo-cereal flour obtained locally.Crème de levain spelt is a premium product of the LIVENDO live sourdough range. Crème de levain spelt offers a real aromatic typicity of authentic sourdough bread with a traditional flavor. Crème de levain spelt brings a real signature (flavore and texture) to bread with a subtle hazelnut smell and a soft crumb. Crème de levain spelt is compliant with [ex : Décret Pain (93.1074)].

LIVENDO® Crème de Levain® Spelt can be used in any types of recipes from country bread to french tradition baguette, croissants and brioche… and also pizza.

Recommended level of use: between 5% and 20% of the weight of flour used, depending on the length of the final fermentation and the results you wish to achieve.
