Live sourdoughs combine all the advantages of the sourdough made by the baker without the drawbacks. Live sourdoughs are ready-to-use in the mixer. Combined with the baker’s expertise, live sourdoughs activity allows the baker to create signature breads. Live sourdoughs are produced from the natural fermentation of cereal or pseudo-cereal flour obtained locally.
Crème de levain is the premium product of the LIVENDO® live sourdoughs range. Crème de levain Rye offers a real aromatic typicity of authentic sourdough bread with a traditional flavor. Crème de levain brings real signature (flavor and txture) to bread crust in long process. Crème de levain Rye is compliant with [ex : Décret Pain (93.1074)]. Crème de levain exists also in spelt version.
LIVENDO® Crème de Levain® Original can be used in baguette, ciabatta, country bread, whole wheat bread, pizza, cereal bread, toast bread, white bread, french tradition baguette, boule levain, brioche, croissants…
Recommended level of use: from 5% to 15% of the flour weight.
This level can be adjusted depending on the final fermentation process and the desired result.
