It is so simple for the baker to create new sourdough breads with devitalized sourdoughs. Nothing else is needed then just adding devitalized sourdoughs to the mixer containing an existing recipe dough to produce several sourdough breads with different sourdough tastes. On the basis of one existing recipe, the baker can realize 10 types of sourdough bread or more. With devitalized sourdoughs the baker can create easlily and quickly sourdough breads and easily diversify his range of bakery goods. The baker can use them alone or play with a palette of notes with no limit for his creativity.

Rye intense devitalized sourdough brings typical notes of rye flour fermentation such as sourdough, fruity, malted notes with a strong intensity of acidity.

LIVENDO® Rye intense S400 can be used in baguette, cereal bread, ciabatta, country bread, pizza, spelt bread, rye bread… but is particularly suitable to bring a rustic style to the final product with a strong acidity.

Adjust the level of use from 1% and 4% on flour weight according to the aroma intensity required from 100g to 400g for 10kg of flour. Add directly to the mixer.
